This olive cream cheese dip is the easiest appetizer you'll ever make and is a crowd pleaser for sure! I hate to even call this a recipe, because it's so easy to make and literally only has two ingredients. No matter your kitchen skill level, you can totally make this and wow your friends.
This appetizer is perfect because it can be made in less than 15 mins and it's easy to keep the needed ingredients on hand. I tend to keep olives and blocks of cream cheese in my fridge, so I'm always prepared to make this just in case I ever need an appetizer on the fly. Plus, I happen to love olives and cream cheese, so I make this quite often.
My friend Rhonda turned me onto this appetizer a few years ago and it's been a favorite ever since. She used to make it with just green olives, but I love Kalamata olives so I changed it up a bit and added them in for some extra flavor. The beauty of this dish is that you can make it how ever you like, with whichever olives you prefer.
Start with a block of cream cheese. If you have some time, leave the it on the counter for about 30 mins or so to soften. However, if you're in a time crunch, you can totally skip this step, you'll just need to put in a little extra elbow grease stiring the cream cheese since it's super firm when cold.
Next, grab your olives and a little olive juice. You'll need roughly 30 olives or so, but you don't have to be exact. I use half green and half kalamata olives, but use whatever you like. Dice the olives and add them to the cream cheese, along with about 2 tablespoons of the olive juice. The olive juice not only helps add extra flavor to the cream cheese, but also helps keep it soft and creamy, making it easier to spread. Lastly, just stir everything together until well mixed. I tend to use the back of the spoon to kind of mash everything together, then stir as the olives get more incorporated into the cream cheese. Serve with your favorite crackers or veggies and voila, yummy olive cream cheese dip! I promise you, it won't last long.
Ingredients:
1 Block of cream cheese
30 olives (any combination of green, kalamta, black, etc.)
2 Tableapoons of olive juice
Put cream cheese into a bowl. Dice olives and add to cream cheese along with 2 tablespoons of olive juice. Stir all of the ingredients until well mixed. Serve with your favorite crackers.
